Chef Chloe Coscarelli knows what she's talking about as she has been a vegetarian her entire life and living as a vegan for over ten. She first gained national attention when she won the Cupcake Wars competition as the first vegan chef. From there she's released three cookbooks, each of which are on the top 100 best-selling cookbooks on Amazon.
In order to really showcase how tasty and approachable vegan cuisine could be, she opened up by CHLOE in 2014. As you might expect, the focus of the restaurant is to present wholesome, plant-based dishes that is also delicious, filling and healthy. You won't see any fried foods here. Even the fries are air-baked so you only get the full flavor of the vegetable without any of the oil. Naturally, by CHLOE also has a heavy focus on sustainability through mindful sourcing of their ingredients and utilizing eco-friendly packaging.
This might sound well and good, but what about the actual food? Well, you'd be happy to hear it lives up to its promise. Regardless of what you order, you'll definitely be satisfied. If you go on the weekends you can choose from their brunch items or you can just get something off their all day menu. The best part is that the menu appeals to vegans and non-vegans alike. Everything bursts with flavor thanks to the combination of vegetables and spices. Oh, and to take it up a notch, the even make their own condiments right down to the ketchup. Guac burger – a black bean-quinoa-sweet potato patty with corn salsa, guac and chipotle aioli sauce

If you're looking to indulge your sweet tooth, you have plenty of options as well ranging from vegan ice cream to cookies. You can even grab some vegan snacks for your dog while you're at it. If you feel like splurging, get the Bag O' Dog Bones. Not only will it make your dog happy, for each bag sold the restaurant donates $1 to the Humane Society.
By CHLOE is already expanding its West Village location to have a separate bakery section for patrons who don't want to wait in line to order. And what a line it is. No matter what time you walk by the restaurant there will always be people waiting for a spot to open up. Of course part of this is due to the small size of the restaurant. With that said, the wait lasts around 15 minutes thanks to the fast-pace with which the food is made.
As busy as it may be, it still manages to be relaxing thanks to their use of homey furniture like the hanging chairs, communal table and potted plants. You almost feel like you're having a barbeque in someone's house/backyard.
Probably the best part of by CHLOE is the fact that it's food that everyone can enjoy even those with gluten sensitivity since they are able to make most of their menu items gluten free. And regardless of whether you are vegan or not, you will definitely enjoy the food here and leave completely satisfied. By CHLOE has planned expansion to the South Street Seaport and Midtown so you can get a delicious vegan burger whenever the mood strikes.
